I'm taking a drive from Houston to Seattle and wanted to know the best possible route as far as terrain goes. I have a VW Jetta

Are you specifically looking for flat or more mountainous? The reason I ask is that my daughter had a Jetta and it would handle most anything with ease.
More flat would be head due west out I-10 and then cut up through Arizona, Utah/Nevada between ranges and head into Oregon and Washington.
Or, you could go up through NM, Colorado, Wyoming, Montana and then bee line through Idaho into Washington. That will give you some awesome mountain scenery.
Either route will be beautiful. I've driven to Montana and back. You are in for a haul but take a good camera and leave some time to stop and enjoy what we do not have along the Texas Gulf Coast.
