The Salvation Army was amazing after Ike hit. They hdd the big white trucks with their big red logo set up and handing out hot meals for weeks. The mobile kitchen was cranking out hundreds of meals for lunch and dinner...had clean up kits and water...and a smile or a hug and a prayer when needed. I am sure they will be needing donations as well. You can find info on where they will be and where you can donate on their site.
